Pan-fried Fingerling Potatoes with Zuchinni and Summer Squash




Fingerlings are so buttery and rich, and they crisp up easily, making great "home fried potatoes". Here I sliced some zuchinni and yellow squash and sauteed everything with garlic butter.

Ok....let's make a list of everything that WOULDN'T be good fried in garlic butter......I think you've been watching Paula Deen..............

Looks very good, but I would've added carmelized onion. We roasted an assortment of potatos yesterday, which included fingerlings. We thought we'd made too much with three pans, but only had about half a pan left over.
